I want to share a quick and easy healthy breakfast recipe with you all.
INGREDIENTS:
1 Ripe plantain
2 eggs
1 oninons
1 pepper
Vegetable oil
Salt and seasoning to taste.
PROCEDURE:
Wash the plantain very well, under running tap water. Then peel off the plantain and cut into desired size and shape.
After that , i sprinkle little salt on the plantain then i went further to light up my gas cooker .
Put your frying pan on the gas, then pour oil onto the pan, heat it up for some time before you put in your plantain.
Stir the plantain while frying it to avoid getting burnt.
Plantains are so emotional,when you take your eyes off them they get burnt so don't try to leave it t even for few seconds because you wouldn't want to eat burnt plantains 😊.
When the plantain turns golden in colour you can take them out.
Next you cut your pepper or blend it whichever way you like it. Slice your onions according to your desired sizes and quantity. I like to fry eggs with lots of onions since I learned about the health benefits of onions.
Add little seasoning and salt to taste.
Crack your egg into the bowl mix it very well.
Add a little quantity of oil into frying pan, heat up the oil for some minutes and then pour in your egg batter.
Leave it for some seconds to spread all over then pan and then flip it. Allow frying for a minute before flipping.
Your fried egg is ready. You dish it out and enjoy your breakfast 😋.
