That skirt thing you mentioned, you just add cornflour and oil to water and pour it all in to steam cook it to get that pretty net. And then let it fry a little while after the water has evaporated instead of before so they're all nice and crisp. We learnt this from YT and it's pretty foolproof, aldo looks very pro when served

Yeah I watched it on Culinary Wars and she broke it when she flipped it ahahaha - it's not common here, you just buy them steamed at the Japanese or Asian restaurants or fried like here. I'm gonna try next time.
