A Hearty Filipino Comfort Food: Monggo with Chicken

Hello everyone! How are you today? I hope that your day is filled with laughter, good health and serenity. I am new to this community @foodiesbehive and I am excited to share my very first post recipe. My recipe is a classic Filipino dish namely "Monggo with Chicken".

What is Monggo? Monggo or also known as mung beans, are small and oval shaped beans. Monggo or mung beans are often cooked in many ways, including as sweet snack such as bread with mung beans filling or in a savory way monggo guisado and many more. But our menu for today was the “Monggo with Chicken”. My boyfriend and I decided to cooked this dish because it was raining and it was a perfect time to enjoy a bowl of soup.

Ingredients for Monggo with Chicken
To make a flavorful Monggo with chicken, we will need the following ingredients:
1 cup monggo or mung beans – rinse the beans thoroughly before cooking to remove the dirt or any impurities. I wash mine 3 times.
½ kilo of chicken – cut into pieces, we prefer the chicken with a lot of bones to give our dish a richer flavor.
1 onion – you can slice or diced the onion
2 pcs tomatoes – slice or diced
1 pc ginger- slice or diced, but for our recipe we just cut it into three
3 grams of squash – cut into cubes
1 bunch spinach – we used spinach as an alternative for malunggay. It gives additional flavor to the monggo and has nutritional component.
1 bunch of kang-kong or water spinach – it is a leafy green component as well used for malunggay alternative.
1 teaspoon of vinegar
1pc chicken cube – to add flavor
2-3 cups of water – adjusting the consistency of the dish
2 tablespoon of cooking oil – for sautéing
Salt and pepper – to taste

Preparation Steps / Procedure
Step 1: Cook the Monggo / Mung Beans – Wash the beans thoroughly to remove any dirt and debris. Place the beans in a pot with 4 cups of water and bring to a boil wait until it became soft and mushy. Stir occasionally to prevent the beans from sticking to the bottom of the pot. Once the beans are soft it is now cooked and set them aside.

Step 2: Prepare the Chicken – Heat a pot over medium heat and add the 2 tablespoons of cooking oil. Saute the onion and ginger until it becomes translucent and fragrant, add the tomatoes cook until it soften and release juices. Then add the chicken add a little bit of vinegar put the lid. After a minute add 2 cups of water and simmer. Let the chicken cook for about 20-30 minutes allow the chicken to absorb the flavor.

Step 3. Combine the Chicken and Monggo / Mung Beans – Pour the monggo or mung beans into the chicken mixture. Add the squash and the chicken cube, simmer for 5 minutes until the squash soften. If the mixture is too thick add more water.
Step 4. Season to Taste – taste the dish and adjust seasoning with salt and pepper.
Step 5. Add the Greens – Once everything is cooked add the spinach and kang-kong. Allow the greens to wilt for about a 1-2 minutes before turning off the heat. These will add a vibrant color and gives additional nutrients to the dish.

Step 6. Serve – Serve while it’s still hot. Perfect pair with steamed rice an Asian thing.
