Dear Foodies & Hivians,
A long time I didn't make no food post, so it was time to cook some beautiful vegan pancakes and make a Hive post about it...
As you can see I did these vegan pancakes with spelt flour, coconut flour, xylit, some extra almond slivers, chia seeds and some vegan egg substitute, plus baking powder and a little bit of vanilla sugar...
The first espresso is for the cook...😉
Let's heat up the pan and put some coconut oil into it...
Then we take the dough that we created and shape nice little pancakes, put them into the hot coconut oil and make sure that it's a non-stick pan. Take the best non-stick pan that you can find and fry the pancakes from each side until they get that golden brown color...
My special...
...is to put some sunflower seeds on one side of the pancakes and then you flip them in a non-stick way and you fry the other side golden brown as well.
Let's pimp the pancakes a little bit...😉
I put some maple syrup on the pancakes, but actually it was nearly finished so I found some more sugar cane syrup which is also very tasty and it goes good with the banana.
I put some banana on top of the pancakes, but actually you can put the banana also into the dough, especially if you got some really ripe banana, you can mush it up with the fork and put it right into the dough...
Anyway, this time it's banana topping style, then you put the syrup over it and maybe a little jelly on the side...
So I found some plum jelly but you can take whatever you like, also strawberry would be nice or maybe apricot... put it on the side of the plate and you can enjoy your vegan pancakes together with your espresso. 😋
