
Hello foodie lovers, Happy Valentine's day. π π
In the spirit of the celebration, I decided to give myself a nice special irregular treat. Lol. You read that right? π I called the meal irregular because it's not what I eat often.
I've been craving this kinda meal for sometime now, and there was no better day to prepare it than today, being the celebration of St Valentine.
Basically, the meal is fried plantain and potato with stir fried veggies. This is actually a first time preparing the veggie sauce, and I didn't know how it'd turn out. Thankfully, the outcome was superb, just the way I dreamt. Hehehe. Now, I'm gonna make it my regular, going forward.
Incorporating veggies in our daily meals make for a healthy diet and this particular meal is nothing short of nutritious and healthy. And if you're a vegan, this is just the next meal you need to try out. I bet, you'll love it, so give it a shot.
Having said that, let's dive into making the meal.
Ingredients.
- 2 ripe plantains.
- A sizeable potato.
- A quarter potion of cabbage.
- 3 cayenne pepper.
- 1 onion bulb.
- 3 medium carrots.
- 1 medium tomato.
- Scent leaves - for color and taste.
- Β½ tablespoon of dried ground ginger.
- 1 tablespoon of salt.
- Vegetable oil - enough for the fries.

- Soy sauce.

*Prepping the ingredients.
Some of the ingredients are already washed, except the cabbage, tomato and scent leaves. So I went ahead to wash them. I decided to add tomato to give the sauce more color, texture and taste.

Washed and really to be shredded.

Dicing onion.

Cutting the carrots.

Dicing the cayenne.
I removed the seeds first before dicing.

Removing the curry leaves from the stems.

Cutting the cabbage.

Peeling/cutting the plantain.

The potato.

All prepped and ready to be cooked.

So let's head over to the kitchen to whip up something nice. Hehehe.

- Pour a considerable amount of vegetable oil into the pan. Allow to heat up for 2 minutes, then proceed with frying the plantains and potato.

You may want to add salt to them before frying - that's how I love it.

- Allow to fry to color of choice, but golden brown is just perfect..

Next is to prepare the veggie sauce.
- In a pan, pour vegetable oil that'll just be enough for stir fry. Allow to heat up for a minute, then add salt.


- Onion goes in first, stir for 20 seconds.

- Next the reds go in - pepper and tomato. Stir again for 30 seconds.

- The curry leaves and carrots follow. Another stir.

- Then added the soy sauce and ground ginger. Stir for 5 seconds. Checked the taste and it was just perfect.

- Finally added the cabbage. Stired well for another 2 minutes to incorporate all the ingredients. Then turned of the heat.

Ready to serve.

Food is served - with love. π Colorful, inviting and so appetizing, accompanied by a cup of 5 Alive Orange fruit drink. I enjoyed the meal. I bet you, you can't resist a bite. I couldn't either. Lol.

Wait, what's with that face in there? LOL

That smile of satisfaction.

Every sip hits differently.

So I had a nice me-time, an in-house picnic, sort of. Spread on the floor at the veranda, with the cool morning's weather, I treated myself to a valentine special - just the way I wanted it, cos I love me. π
