Do you remembermy weekly food posts? I used to write these regularly over a couple of weeks until I had a difficult time and from there I lost the string. But with all these photos I took once again with my phone, I remembered about it so until it's not too late, I thought to start write them and share them with you again, even if it's once or twice a month.
I didn't make photos on every meal we've had, that would be too much for me. But I'll share with you the once I photographed, I hope you'll enjoy them. They all come with a few words on the side, it can be the recipe, a few instructions, tips and tricks, ingredients or just my thoughts about it.

My favorite Sandwich: Arugula and Salami Pita Sandwich

I'm already dreaming on tommorow! I'll go in the morning to buy everything I need for this sandwich! I simply love it! I could have this a few times a week easily!
It's pita bread cut in half filled with fluffy cream cheese, Sliced Milano Salami (a kind of Italian Salami), A LOT of Arugula (or Rucola as we call it here) and thats it.
This is perfection to me. Bread must be fresh and rest the ingredients cold, at fridge temperature.
I sometimes add prosciutto crudo and cheese slices or gorgonzola but I prefer it as I mentioned above.
You can have it on breakfast or lunch, maybe even dinner I don't know. Depends on the day I guess.
Overnight chia seeds & oats topped with goodies
Sometimes I enjoy the bitter-sweet taste of raw cacao nibs. Very often I grab a few and just eat them like that but usually, I enjoy them with bananas and chia seeds pudding.
This time was a chia and oats overnight kind of thing, where you'll have to add in a jar a few oats and one Tbsp chia seeds, a splash of your favorite plant milk, maybe honey, maple syrup, agave or vanilla beans. Put them in the fridge and enjoy it in the morning with your favorite topping. It can be fruits, jam, almond or peanut butter, nuts, seeds, coconut flakes etc.

To not forget what ingredients I add in my smoothies, I developed this method to help me with this. I often use to edit smoothie images and add text to the image with ingredients list, as you can notice in the picture here. (maybe you can do the same if it happens to you too and need to keep trace on ingredients list)
My almost 5 yrs old is a fan of smoothies. This smoothie here it's a combo of banana, spinach (hidden), cacao powder, carob powder, probiotics, soy milk, bee pollen and eventually almond and peanut butter.
Oatmeal
Although, lately I'm not too happy with having oatmeal, my son loves it. It's his TOP 3 foods and meals he'll want to have for breakfast.
Mommy, I want oatmeal today. Can you please make me some?
Thats him, a few days a week. But I try to provide him a diverse breakfast so it's not going to happen! At least, that often as he wish.

Anyways, in the left it's a basic oatmeal with honey topped with fresh apple slices. It meant to be a Snowman LOL. That nose it's creepy though.
To the right, there's oatmeal topped with apple and peach compote, cinnamon and fresh pomegranate.
A Kiwi Christmas Tree
I've got creative one morning and had this idea or saw it somewhere? It can be, but I'm not sure that's the case.
Anyways, there's just kiwi cut in pieces, frozen raspberries and coconut flakes.
Caleb was all over the moon with this! He adores fruits by the way. So seeing them like this, he was super excited, almost didn't want to eat it. :))
Kogel Mogel

Now this is funny because I had absolutely no idea this old times dessert has such a fancy name: Kogel Mogel.
We call it just "beaten egg yolks & sugar. 😄
This is something I have since I was little. It's a famous recipe for boosting energy level and coughing home remedy.
Kogel mogel is an egg-based homemade dessert once popular in parts of Europe. It is made from egg yolks, sugar, and flavourings such as honey, vanilla, cocoa or rum, similar to eggnog or zabaione. In its classic form it is served slightly chilled or at room temperature. Served warm or hot, it is considered a home remedy for sore throats. Variations include milk, honey and soda.

Exactly like this! We like it just like that: egg yolks and sugar. Chilled or room temperature. You just need to beat the egg yolk with one teaspoon of sugar using a hand mixer for about two minutes, until it gets fluffy and the yellow is whiter.
There's always a controversy on eggs consumed raw, but I don't have a problem with that. At least not when I'm using eggs from my own chickens and I know they are in good conditions and the eggs are not spoiled.
Oven baked Potatoes topped with bacon, mozzarella, cream cheese and parsley

This is something I cook very often because we just like it.
You can even switch on some toppings and on the side veggies and get a different taste.
Basically, I boil the potatoes until they're 99% done. Then cut them in half, add spices (I have a mix made by my mom, it's something like this: salt, sweet paprika, coriander, black pepper, sage, parsley, oregano, cumin, turmeric), add bacon and mozzarella.
Bake for about 15 minutes.
Serve while still hot with cream cheese on top and parsley. AND definitely OLIVE OIL.
Other foods you can have on the side are: raw red onion, green onions, rucola, green salad, dill, radishes.

I decorated this plate of appetizers for the Holidays. It was made just for the three of us to serve it on Brunch, in a lazy morning almost noon day. 😁
Starting from the buttom, there is hard cheese, provolone more precisely. Then it's feta cheese, cucumbers, meatballs, cheddar, cherry tomatoes, olives, salami, oregano and basil feta cheese, Bresaola, gorgonzola and another meatball in top!
The rosemary was amazing with this. Its flavour was all over the place, and where it touch the food, you could feel the rosemary! I love rosemary!
Shrimp, Rice and Salad

- Boiled rice
- Shrimp cooked in butter with salt, pepper, fresh parsley, a bit of garlic.
- Grilled Pinapple
- Avocado, Cucumber, Onion and Parsley Salad. Garnished with olive oil and salt.
Cheesecake in a Jar
We have a lot of berries in the freezer, from our own production. And we need to consume those hehe.
This time we made a Strawberry Cheesecake, or sort of. It's a favorite for Caleb, especially because he's always helping with the process.
We followed this recipe, the difference being that we used fresh strawberries instead of cooked ones. And we added lady fingers too.
This is all for now! I'll try write another food collection post next week. Though.... to be honest, maybe it's best to take it back. I was so buzy these days and I still am. I don't even know how I got into writing this post....🤔
