Easy, quick and tasty: The vanishing Jhunka Bhakar recipe

in Foodies Bee Hive7 months ago (edited)
Hello friends. Every day in the morning and evening, one question always troubles all housewives, and that is what to make with the vegetable today? Sometimes, when the vegetables are finished, there is no time to go to the market. Sometimes we forget where to go to the market in the morning. This is what happens. But housewives are very smart and intelligent, they make something from the things available in their house and solve this problem.

Today I am going to tell you about one such thing. Friends, this is "Jhunka". In Maharashtra, it is also called Jhunka, gram flour. If this vegetable is not available in the house, it can be made from the things available. Anyone can make it easily. Nothing can be so easy. Put oil in a pan, add onion, garlic, coriander leaves, turmeric, cumin seeds, etc., and then add gram flour slowly and keep stirring. Jhunka is ready. This is Jugaad, which means adjusting the time, but today I am going to tell you the way to make the original Jhunka from this. Which was very famous in Maharashtra, but now it has become a lost recipe. Not so much lost but nowadays no one makes it properly.

There was a time when the Maharashtra government had kept it on its agenda. And the government used to give subsidies for setting up its stalls. It was called the "Jhunka Bhakar Stall" stall. It was very cheap, so poor, rich everyone used to eat it with fondness. It was served with Sorghum roti, raw onion, and green chilies. It was very tasty. Even today it is made, it is made with gram flour, and it is not so tasty. But today I will tell you the method of making it in the old way. It is very tasty, you can make it and see how tasty it is.
Ingredients for this:

Gram lentils
Green chillies
Green coriander
Whole coriander
Turmeric
Garlic
A little oil etc.

Method of making it:
First of all, you have to keep the gram lentils overnight. In the morning take out this lentil in a vessel, and grind all the ingredients mentioned above, as shown in the image. In earlier times, this spice was ground on a stone. There is a little difference between grinding in a grinder and on a stone. Mix the ground spice and ground gram lentils well. And put it on a plate with dates as shown in the image. And steam it. I have steamed it traditionally. I have put it in a steel strainer and placed it in a vessel over water. It gets steamed when the water boils. You can see in the image. You can steam it in any way. After steaming, chop it finely put it in a pan with some oil, and fry it well. Your Jhunka is ready. You can taste it by cutting it into squares without chopping it finely and frying it. Friends, it tastes very delicious. I have seen my mother doing it in the village. Which I shared with you. Now no one makes it like this, we make it quickly with readymade gram flour flour. It takes a little effort, but it tastes very good. You can eat it with Sorghum, or millet roti. Thank you friends.
