I always cook rice on the stove with a lid, I do as you 2 cups of water to 1 cup of rice with a little salt added. I bring it to a boil stir once put the lid on it and set the temp to low don't look at it for 20 minutes, no more stirring if it still looks wet, sometimes I have the temp too low so I will cook it a little longer but for the most of the time it is done in 20 min. My favorites are black eyed peas and rice or pinto beans and rice your recipe sounds good but I do not care for spicy food.
