Hello foodies π , this is my first post on this community. I am excited to share with you how i made a delicious and affordable rice and stew for lunch in my hostel.)
Rice and stew is a common food combination in my country Nigeria. It's more like a tradition to prepare this meal on Sundays especially in the Eastern part of Nigeria where i come from.
Almost every Sunday this meal is being prepared in Nigeria homes. The funny fact is that there is no rule that says th meal must be prepared only on Sundays, but we grew up getting use to it and kids love it alot.
As a kid, when rice and stew is not cooked in my house on a Sunday it always feels like something is missing, even if another meal that is more expensive was prepared it always feel strange and if it was prepared on any other day that is not Sunday, it's gives the feeling of a special day.
I am a student of Nutrition and Dietetics, I always try my best to eat healthy. As a student it's easy to eat junks most times.
Today I decided to cook rice and stew because i haven't been eating healthy lately because I've been busy with exams for the past three weeks.
PREPARING THE STEW (TOMATOE SAUCE)
INGREDIENTS:
3cups of Rice grains
200g fresh dish
8 pieces fresh tomatoes
1 satchets of artificial tomato paste to increase the quantity (i used this because now is not the season for fresh tomatoes in my country so it's expensive)
7 Caribbean hot pepper
2 cups of vegetable oil
Ginger
Garlic
1 medium sized Onions
1 tablespoon of curry powder
3 cubes of Maggie seasonings
1 tablespoon of spicecity seasonings
1/2 teaspoon of salt
2cups of Vegetable oil
PROCEDURE:
Wash the Frozen fresh fish and Season with curry, onions, salt, and maggi cube. Add a little water
Cook for 5min to get the stock and fry
Wash the fresh tomatoes, fresh pepper, Ginger and garlic.
Grind the Fresh tomatoes, Fresh pepper, ginger and garlic
I used motar and pistle to grind to paste

Slice the Onions

Add oil in a heated pot and preheat for 1 minutes
Add the sliced Onions to the preheated oil and stir fry for 30 seconds
Add paste tomatoes to the stir fried onions and fry for 5 minutes
Add the grinded tomatoes, paper, ginger and garlic and continue frying until the water content of the tomatoes is dried out
Add the seasonings; maggi cubes, curry, spicecity and salt. Continue frying for like 5 minutes
This is the spicies i used
Add the fish stock and if it's too thick add little water and allow to cook.
The Stew is ready
PREPARING THE RICE
Measure out 3 cups of rice Wash and preboil it Wash again after preboiling to reduce the starch content Boil again finally until the texture softens
My rice and stew is ready
