Healthy couscous after the excesses of Easter 💕💕 (ENG/ESP)

Good evening hivers how are you? How much did you eat yesterday? Here in Italy for Easter and generally for every holiday we have big lunches and dinners with relatives or friends, even today that is Easter Monday we usually have barbecues but today I declined the invitation to the barbecue because I had eaten too much yesterday and I decided to cook something healthier and lighter because my stomach is no longer used to too much food!

For this recipe you need:

  • 80 grams of couscous
  • 60 grams of mixed salad
  • 80 grams of tuna
  • 70 grams of canned fine peas
  • 3 tablespoons of salt
  • 4 tablespoons of olive oil

First we drain the peas and prepare them in a pan with a tablespoon of oil, cook them stirring them for about 7 minutes.

Aquí en Italia para Pascua y en general para cada día festivo tenemos grandes almuerzos y cenas con familiares o amigos, incluso hoy que es lunes de Pascua solemos hacer barbacoas pero hoy he declinado la invitación a la barbacoa porque había comido demasiado ayer y he decidido cocinar algo más sano y ligero porque mi estómago ya no está acostumbrado a demasiada comida!

Para esta receta necesitarás:

  • 80 gramos de cuscús
  • 60 gramos de ensalada mixta
  • 80 gramos de atún
  • 70 gramos de guisantes finos enlatados
  • 3 cucharadas de sal
  • 4 cucharadas de aceite de oliva

Primero, escurrimos los guisantes y los ponemos en una sartén con una cucharada de aceite, los cocinamos removiendo durante unos 7 minutos.

Then we prepare a saucepan with about 300 ml of water and salt for the couscous, when the water boils we throw in the cous, turn off the heat and let it rest for about ten minutes. Then we put it in a large bowl, take the tuna, drain it and mix it with the couscous, also take the salad, clean it well if it is fresh if like me you have it in a bag it is already washed usually and add it to the couscous, mix everything well and finally add the fine peas.

Season with oil and serve hot or cold it is excellent in both ways a really healthy dish, light and perfect for staying lighter after holiday lunches.

Luego preparamos una cacerola pequeña con unos 300 ml de agua y sal para el cuscús, cuando hierva el agua echamos el cuscús, apagamos el fuego y dejamos reposar unos diez minutos.

Luego lo ponemos en un bol grande, cogemos el atún lo escurrimos y lo mezclamos con el cuscús, cogemos también la ensalada la limpiamos bien si es fresca si como yo la tenéis en bolsa ya viene lavada normalmente y la añadimos al cuscús, mezclamos todo bien y por último añadimos los guisantes finos. Aliñamos con aceite y servimos frío o caliente, queda excelente de ambas maneras, un plato realmente sano y ligero, perfecto para no aburrirse después de las comidas navideñas.

This looks like such an eye catching dish! When I saw it , I could imagine glitters around it. This must be so delicious. I wish I could try this out. I can see how thorough the process is to make it with many steps but it´s worth making something so delicious.
