Hello, friends! Today we are going to make a delicious zapekanka (or, as people call it, gratin). I found the recipe for this dish from my favorite cooking blogger Sasha Demyanenko on his CookingTime YouTube channel. I love to watch his videos in my free time and admire his professionalism. He mainly specializes in cooking desserts and various yummy things. But you can also find delicious and healthy dishes for every day. This time I found a video recipe where the main ingredient was cauliflower. And of course, I immediately decided to make this dish for dinner, because Eren loves cauliflower in any form!
To prepare cauliflower gratin we will need
- 1 kg cauliflower
- 4 eggs
- 200 gr yogurt
- 200 gr of cream (I have 35%)
- 150 gr cheese for the filling
- 50 gr cheese on top
- ½ nutmeg
- salt
- pepper
STEP 1
We can start preparing a delicious and healthy gratin! First, we need to clean the cauliflower florets from the excess. Then rinse under cold water.
STEP 2
To be sure that the cauliflower will bake well in the oven, we need to boil it beforehand. We put it into boiling and salted water, cook it for 3-5 minutes after the water boils again under the covered lid.
STEP 3
While the cabbage is boiling, we can start preparing the "dough". To do this, we will mix the cream, yogurt and eggs in a suitable bowl. Mix all the ingredients thoroughly.
STEP 4
To add a unique flavor to our dish, we will use seasonings. I like to add seasonings to all the dishes I cook. Proper combination of products and spices will always improve any dish you make. So, add ground black pepper, salt and nutmeg to the egg mixture. Stir everything together until smooth.
STEP 5
Next, we need a solid baking dish (preferably ceramic or glass). Grease the mold with butter all over the surface.
STEP 6
In the mold, greased with butter, lay the boiled cauliflower florets. It is better to put them in a single layer, then the cauliflower will bake well and will not be soggy.
STEP 7
In this recipe we are guided by one important rule "You can never have too much cheese!". I place cheese on the cauliflower and shake the baking dish a little so that the cheese is drowned between the cauliflower florets.
STEP 8
Now, we pour the cauliflower and cheese over the egg and cream mixture. By now, you will already smell the wonderful scent that the nutmeg gives off. Many cooks love the combination of cauliflower and nutmeg and use it during cooking.
STEP 9
You can additionally place cheese on top. Next, we put the baking dish in a preheated oven to 180 °C (356 °F). We are going to wait for 45-60 minutes, the cooking time depends on your oven. I advise you to check your oven periodically so that the dish doesn't burn.
STEP 10
Delicious cauliflower gratin is ready! You can serve the gratin as a stand-alone dish, or you can add something meaty. Turkey or chicken works well for this dish.
