Crispy Gabin Cookies Filled with Mung Bean Paste

Crispy Gabin Cookies with Mung Bean Paste


Gabin cookies are indeed a favorite snack for many people, and there are various ways to prepare them. Well, since I’ve previously made gabin cookies with pandan jam, this time I’ll be making a different version.

I’ll combine mung bean paste into the gabin cookie dough and then deep-fry the cookies coated in panko breadcrumbs. This is to make the gabin cookies crispier and give them a different texture from the ones I’ve tried before.

This is unusual compared to the gabin cookies I usually come across, which are typically fried without breadcrumbs. I feel this version has a more authentic flavor and is, of course, much tastier than the ones I’ve made before.




Ingredients

10 cookies
100 grams of breadcrumbs
100 grams of all-purpose flour
50 grams of mung beans
300 mg of coconut milk
1 tablespoon of tapioca flour
2 tablespoons of granulated sugar




Cooking Procedure


Boil the beans—which have been soaked overnight—until they are tender and cooked through.

Then blend the mung beans until smooth, adding coconut milk as you blend.

Next, transfer the blended mung beans to a pot, add the remaining coconut milk, and stir in 1 tablespoon of tapioca starch.

Stir until well combined, then add granulated sugar and salt. Cook until the mixture thickens and no liquid remains.

Once it has cooled slightly, spread it over a cookie, then top with another cookie.

Dip them in a batter made by diluting flour with enough water, then coat them in breadcrumbs until fully covered.

Fry until cooked through, using low heat to prevent burning.

The end result, after frying and draining, was that the cookies had very little oil left on them—you can also let them drain briefly on a paper towel. So, once they had cooled slightly, I served them and enjoyed them at the dining table with a cup of tea. You know, this exceeded my expectations—they turned out absolutely delicious. The combination of sweet and savory flavors with a crispy texture was just perfect. I was so happy to have made this dish with such perfect results.

These crispy gabin cookies are perfect for serving at the dining table, as a treat to enjoy with a cup of coffee or tea, or as a snack for family gatherings. They’re one of my mother’s favorite cookies.
