Cucumber Sohun Soup Spicy
Sohun or Soun is one of the vegetable noodles made from the starch of mung beans, potatoes, sweet potatoes, sago, or other types. Now in other countries many call this noodle as glass noodle or mung bean noodle. But whatever you call it, this type of noodle has an appeal and delicious taste processed into various dishes.
Cucumber Sohun is a bowl of fresh soup-like noodles, paired with chunks of cucumber and egg. This dish has a spicy and savory taste so for spicy lovers this is the right menu choice for you to enjoy something fresh.
Now this recipe itself I got from a friend when I asked something that can be processed from vermicelli. As a result this menu became his choice and he said it was very suitable to be enjoyed during winter conditions. Well curious not with the recipe, let's see the step by step preparation!.
Ingredients Needed
1 egg
1 cucumber
1 spring onion stalk
1 celery leaf
3 cloves shallot,
1 clove of garlic,
¼ teaspoon salt
1 red chili pepper
¼ teaspoon stock powder
500 ml water
Cooking Procedure
Grind garlic, shallots and curly red chili with salt, coarse puree only.

Cut the cucumber, here I don't remove the skin of the cucumber directly into thin small pieces.

Also cut the celery leaves and green onions, now all the ingredients have been prepared when cooking.
Fry the eggs with enough oil, fry them scrambled and then add the mashed spices.

Add water and also broth powder then add sohun and stir.

Let the sohun soften, then add the cucumber and celery leaves that have been cut.
Bring to a boil, let everything blend together and then don't forget to correct the taste.

The spicy cucumber vermicelli is ready to be served, look at how tempting the result I served in the bowl is. The vermicelli is perfectly cooked and I really like the texture of the vermicelli which is oily and soft. Especially when inhaled combined with spicy sauce ahhh today really enjoy good food more than enjoying boiled instant noodles.

The combination of fresh cucumber pieces is enough to provide extraordinary freshness. I didn't expect that cucumber combined with vermicelli would be so delicious, and this is my first experience cooking cucumber with noodles. And you know it's going to be my favorite bowl of food and a recipe I'll definitely be making again and again because it's that good.
