My First Pineapple Jam Lekker Holland Cake

Baking cakes always gives me a fantasy in my house, the aroma of the cake makes anyone who comes will definitely want to taste it.




Hi culinary lovers, this time I will invite you to share one of the unique and new recipes I made for the first time. This cake is a very delicious cake and anyone who enjoys it will definitely fall in love with this cake.




Lekker Holland

The lekker holland cake is one of the traditional Dutch cakes, usually enjoyed at leisure for a tea time menu. Usually, I find this cake in many shops, or certain cafes. This cake has many variants now, although the original recipe is very good, but adding jam topping will make the lekker holand more delicious. I often buy this cake with pineapple filling inside.

I think the pineapple variant has a very good flavor and is very authentic. Now because I really like pineapple filling, I will try to make it with pineapple jam that I prepared. Well as we know holand lekker has a strong buttery characteristic. It is crispy on the outside and soft on the inside with a fragrant aroma.

This cake is popular in Indonesia but in my area there are not many who make it. It is usually only available in big cities and certainly in popular cake shops. I think this cake itself is very easy to make, it's just that many people are lazy to start. I also like that very rarely make it and this is my first Lekker Holland cake.

Ingredients


Main Ingredients

200 grams butter + margarine
2 eggs
140 grams powdered sugar
Vanilla powder to taste
220 grams flour
40 grams milk powder

Topping Ingredients

200 grams pineapple jam
1 egg yolk
To taste grated cheese




Cooking Procedure


Add in a large container, powdered sugar eggs and butter mixed with margarine.

Mix the egg powdered sugar and margarine on high speed until pale in color.

After changing color, add milk powder and mix again.

Then add flour, don't forget to sift it so that the texture is smooth, mixer until it is evenly mixed.

Then put the dough in a baking sheet that has been coated with oil paper at the bottom, I add the dough with triangular paper so that it is easy to flatten later. After half the dough is flattened, add pineapple jam, flatten again like the first layer earlier.

Then add the second layer and flatten again. Brush with egg yolk until evenly distributed.

Give a fork stroke, then add choco chip topping and cheese according to taste.

Bake at 180°c using top and bottom heat for 45 minutes. Now when baked, check periodically and don't forget to change the position of the pan so that it cooks evenly.

Yeayyy the first time out of the oven was very happy to see this cake succeeded even though the bottom was a little browned but this did not mean it was burnt. It's very evenly cooked, the dough part is just right, the softness is amazing. At the top, it's a little hard but crispy, not hard and dense. So glad my first holand lekker worked perfectly. Just imagine the aroma when I baked it until I left the house, it smelled really good.

After cooking, I don't immediately take it out of the oven, I adjust it at room temperature and then I flip the cake and cut it according to taste. Now the topping area is a little untidy, usually people add almont sice nuts on top because I don't have it, I took the initiative to add cheese and also choco chips.

Overall the taste is very much in line with what is sold in the bakery and this is the tastier version maybe. It did turn out that perfect. So for those of you who want to try it I think this recipe is enough to rely on you for beginners like me.
