Sautéed Sardines with Potatoes

Quick meals are always my go-to on busy days. I usually opt for canned food, but I'm not really a fan of instant canned food like this. However, the rest of my family, especially my husband, really love canned fish.*

In Indonesia, this canned fish is known as sardines, and the various brands sold are still known as sardines. It is rare for people to refer to them as canned fish. Sardines are a type of fish that is processed into canned fish that has been cooked and preserved in chili or tomato sauce. For some people, canned sardines like this are reprocessed into delicious dishes by adding some seasonings. Including me, we usually reprocess these canned dishes. Usually, my family's favorite dish is to make stir-fried sardines with potatoes like this. This dish is simple but has a delicious taste.

Ingredients

1 small can of sardines
1 potato
1 ½ tomatoes
1 clove of red onion
2 cloves of garlic
3 red chilies
2 green chilies
6 cayenne peppers
½ teaspoon of salt
1 stalk of spring onion




Procedure for Making


Chop the shallots, garlic, and small tomatoes as usual for sautéing. Roughly chop the spring onions and red chilies. I did not chop the small chilies.

I cut the potatoes into small cubes, and then all the ingredients were ready to be cooked.

For the canned fish, I first strain the seasoning, then fry the fish until it has a crispy skin.

Sauté the garlic until fragrant, then add the shallots and tomatoes.

Add the chili peppers and scallions and cook until slightly wilted, then add the strained sardine seasoning and don't forget to add water. Then cook until thickened, add the potatoes, and cook the potatoes until tender with the sardine seasoning.

Add salt, and when the potatoes are tender and the water has reduced, add the fried ingredients. Cook briefly, then turn off the stove.

Serve the sardines on a serving plate with white rice. Look at the beautiful color, and most importantly, the delicious and savory taste. The combination of sardines, potatoes, and all the seasonings is perfect. Even though I don't like it, I tasted a little bit and it was indeed delicious. But again, I don't like canned fish, so I didn't enjoy it.

My husband immediately reviewed my dish, saying the flavor was just right—the savory, slightly spicy, and sweet umami notes from the sardine sauce made it even more delicious.

Nothing is more delicious than sardines in sauce. Here in my country, and especially in my area, is where this canned food is produced. My late grandfather was a shareholder in this company when it was private, until the government took it over. But I grew up loving these canned foods. They are my cats' and dogs' favorite dish. Hugs.
