Watermelon Coconut Milk Pudding

When mixed with coconut milk, the bright red watermelon transforms into this beautiful shade. The color is so soft when served; it looks luxurious and absolutely adorable. It’s different from the watermelon dessert I made before, which was vegan-based. This time, the watermelon is mixed into a single batter, so if you weren’t told, you’d definitely be fooled. Even my husband was confused trying to guess what this pudding was—he never would have guessed it was a watermelon dessert because the color turned out so beautiful.

Ingredients

1 packet jelly
1 tablespoon cornstarch
2 tablespoons sweetened condensed milk
400 ml mineral water
2 tablespoons granulated sugar (adjust to taste)
Making Procedure
Cut the watermelon into small pieces so it’s easier to blend, then add them to the blender along with the water.

Mix the milk and cornstarch, then add the coconut milk and stir until well combined.




Add the blended watermelon juice to the saucepan, stir, and turn on the stove to cook the pudding.

The pudding’s texture is very soft, so when serving, I added thick sweetened condensed milk to give it a sweet, fresh flavor.
