JOLLOF RICE || TUTORIAL

Hello food lovers, how's your weekend going. I hope is great. I'm sharing a delicious dish I cooked for dinner for my family. I'm excited to post it on #foodiesbeehive community.

Jollof rice is a rich and popular west African dish. The dish is traditionally made with tomatoes, peppers, onions and other spices. Jollof rice is traditionally cooked on gas or firewood, but I prefer firewood because it brings out that unique flavor. Although, there are different ways to prepare jollof rice, each regions adds its own twist. I'm thrilled when I prepare jollof rice and it looks appetizing and when you taste it, you'll find it's delicious and spicy. I love spicy jollof rice and I'm happy to make it for dinner and share it with my beloved family.

INGREDIENTS;

  • 1/2 tier of rice

  • One sachet of tomato paste

  • Fresh pepper

  • Shombo pepper ( cayenne pepper)

  • Golden Terra vegetable oil

  • One sachet of Spicy city

  • Onga stew seasoning

  • Curry (powder)

  • Four cubes of Terra seasoning

  • Five garlic bulbs

  • Salt

  • Onions

  • Sokoto pepper

METHOD:

  • These are the ingredients I'm using to prepared my delicious jollof rice.

  • I put the pot on fire, added 3 cups of water, and Iet it boil for 10 minutes before adding my rice. Then, I parboiled it for 15 minutes before taking it down to drain and wash it.

  • After washing, I set it aside, I grinded my peppers, onions and garlic together. Next, I added sachet tomato paste to the grinded mixture.

  • I placed the pot on fire and let it dry before adding vegetable oil. I added 2 spoons of oil and allowed it to heat up. I poured in the grinded mixture and stirred untill it fried for 8 minutes till the tomato sauce darkened. I poured the meat stock into the pot to make stew.

  • I added two cups of water and added my salt, 4 cubes of Terra seasoning, Onga seasoning, spice city seasoning, curry powder and sokoto pepper, then stirred and let it boil for 10 minutes.

  • I added the rice and stir untill it's well mixed with the stew. Allow the rice boil for 20 minutes, I checked if the rice tasted good or needed a bit of water.

  • When the rice was still boiling, I added my meat. I didn't fry the meat because of my mom, but you can fry yours. Everyone has their choice.

  • Food is ready. 😋 You can serve it with salad and chicken, fish or egg but I paired mine with beef.
