Those look delicious. It reminds me of the Philippine Rice cakes. Ours is a bit fluffy/airy and white. I bet this would go well with a lot of dishes as well.

Indeed! Different cultures have their unique rice cakes. The fluffiness and airy texture sound delightful. We had another version called 'Vapa Pitha' which is similar to what you are talking about.
It's fascinating how diverse cuisines use similar ingredients in distinct ways!
