Today I made one of the most common foods eaten by Indonesians, white sticky rice with srikaya pandan. This food is one of the traditional Indonesian foods originating from Sumatra. The combination of savory sticky rice with sweet and creamy srikaya sauce.
The ingredients are easily available in the market, white sticky rice is a common ingredient in Southeast Asia, with a stickier texture than rice and creates a smooth and sweet flavor.
Srikaya pandan, the green-colored pandanus shrub that can be obtained from pandanus leaves. Pandanus leaves (Pandanus amaryllifolius) is here as a green natural colorant which is very easy to find in our country.
This is our family's favorite dish, the ingredients are easy to find in the market and not too difficult.
White sticky rice
Ingredients needed:
- 1 kg white sticky rice
- liquid coconut milk
- pinch of salt
How to make:
- Wash the white sticky rice, then soak it with liquid coconut milk with a pinch of salt for about 1 hour.
- then cook on medium heat the soaked sticky rice while stirring continuously so as not to burn.
- After the coconut milk has shrunk, steam the sticky rice again for about 20 minutes.
Srikaya pandan sauce
Ingredients needed:
- Thick coconut milk
- 2 eggs
- 3 tablespoons cornstarch
- 150 mL pandan leaf extract
- 200 gram of sugar
- pinch of salt
How to make:
- First, make the pandan extract by mixing water and chopped pandan leaves in a blender, then strain.
- Put the pandan water, sugar, coconut milk, cornstarch, and eggs into a container then stir until smooth, don't forget to add a pinch of salt.
- Cook on low heat, stirring quickly, once it starts to boil reduce heat, cook until desired consistency.
- Cool at room temperature
- Serve white sticky rice with srikaya pandanus.
- Eat it warm or cold, according to your taste
