As a newbie i came across this community and decided to give it a try.
Still in the celebration of Akwa ibom state at 38 . We decided to cook our local palm oil rice to crown it all this evening.
Since it was a holiday, i took the time to take pictures on the recipe i used for this local delicacy.
Palm oil rice is a locally prepared food generally known as concoction rice. It's fast and easy to prepare.
In cooking palm oil rice, the following ingredients are needed;
Rice
Palm Oil
Crayfish
Pepper
Onion
Seasoning cubes
Salt
Vegetables leaves (ugu) or any spice leave of your choice.
STEP 1: parboiled and washed the rice( this depends on the type of rice you are using, I used our locally produced rice) and set aside.
STEP 2: Put a clean pot on a medium heat
Pour the oil into the pot and allow it to heat for a few seconds (note the oil shouldn't be heated to bleached)
STEP 3: Add the grinded or pound crayfish and pepper and allow it to steam for 10 seconds
STEP4: Add the washed rice into the pot and stir, allow it to steam for 10 seconds
STEP5: Add water (the volume of water should be equivalent to the quantity of rice).
STEP 6:Add your salt and seasoning cube to taste.
STEP7: Add your fish or meat as desired, and your. chopped onions
STEP8: Allow it to cook for a few minutes depending on how soft you like your rice to be
STEP9: Add your sliced vegetables, leaves, and stir to mixed.
Our delicious palm oil rice is ready. Serve with any drink of your choice.
