YUM!!!! I never thinkk to do seitan. It always looks a little boring to me, but with the stuffing and the sauce, that's a game changer. We do have quite a few vegetarian/vegan things at our family Christmas - a pasta bake usually, and I'll do some veggie kinda salad or something, or fillo stuffed with a nutty mushroom lentil filling or something like that. I'll have to try that one year. Love that photo - hilarious.

The sauce makes the game. The second stuffing is the better one in my opinion, but either way it's really good. I'm experimenting with other types of seitan, like mixed with lentils and stuff, and trying different spice combinations and flavors. Right now, I'm thinking about creating my own "Shawarma" mix to offer at the bakery. That would be delicious.

I like the idea of a shawarma mix. I tend to make mushroom shawarma which is easier.

... that does sound nice, too. What is the spice blend you use? Regular, or something weird? Mine would be:

Paprika
Cumin
Garlic Powder
Onion Powder
Coriander Seed powder
Turmeric

Usually I'd put in some really hot chili powder, but it's to sell, so... I'd have a chili paste :-D I'm thinking about one weird booster. Like cardamom. Or Cloves. Something different.

That's pretty much it for me too. I do like smoked paprika a lot. Sometimes cardomom, sometimes cinnamon. Depends what I fancy. Oregano.

Oregano might work well. I'll to a little testing. I have a blend that is Chermoula-Style, that could work just perfectly for what I want. I'll let you know how it turns out!
