Stir-fried water spinach with shrimp paste and "KARENG" fish

Hi culinary lovers, How are you today I will make a recipe from vegetables mixed with crispy anchovies?

I learned this vegetable recipe from my neighbor. He often mixes anchovies with any vegetables. When he stir-fries vegetables, he always adds anchovies. But he adds small anchovies, and I don't have any small anchovies. So I added a slightly larger one.

The anchovies that I added are what we usually call "KARENG" fish. KARENG itself is very famous in my area. KARENG is a type of dried or salted anchovy that is then sold in the market. There are many sellers of KARENG fish in my area. This fish is also very delicious when cooked in coconut milk, and it is also very delicious in chili sauce. KARENG fish chili sauce is my favorite.

And next time I will definitely make anchovy chili sauce, but for now I want to cook water spinach. I picked the water spinach I cooked from my yard, so the water spinach is still very fresh.

one bunch of spinach leaves, 100 grams of anchovies, 1 tomato, 3 cloves of shallots, 2 cloves of garlic, 6 red chilies, 5 bird's eye chilies, 1 tablespoon of shrimp paste


manufacturing procedure


First


First of all, I cut the chilies, tomatoes, shallots, and garlic, then I blended them until they were completely smooth.

Second


While waiting for the spices to be ground, I started frying the anchovies or dried fish. After the dried fish was cooked, I heated the oil and then I sautéed the spices that I had blended earlier until cooked.

Third


After the spices were cooked, I added the vegetables that I had previously cut and I also added the KARENG fish.

Four


Next, I cooked it until the vegetables were completely cooked. I didn't add any more water so that the KARENG fish would remain crispy. I only added a little salt.

RESULTS

This is the result of the kale vegetables combined with anchovies that I made. It is really delicious and savory. The anchovies are still crunchy because when I cooked them I didn't add any more water.

Meanwhile, I deliberately cooked the vegetables until they were not too cooked so they still had a slightly crunchy taste.

In my opinion, vegetables that still have a crunchy taste are very delicious. Moreover, when combined with slightly salty and crispy fish, it really makes me want to eat a plate of warm rice and want to add another plate.
