This is the first time I have ever heard of Moi Moi, @luchyl ... An interesting dish, especially how it solidifies and forms. I'm wondering... what is the consistency... is is like Tofu or is it like paste? I don't eat fish myself so I couldn't make it the traditional way like you do, but it does make me curious as to the texture.

It has a fluffy texture, it shouldn't be too soft nor hard. That's why it's adviced not to add too much water while blending or mixing it.
