An Indian vegetable ( Toro root)

Arbi ki Sabzi is very popular in North India. It is also known as Toro root. It is rich in fiber which controls blood pressure. It also strengthens the digestive system. It is a kind of root which is used as a vegetable. Probably very few people have eaten it but it is very tasty. Ingredients: 1) 250 gms - Arbi (Taro) 2) Oil 1 table spoon 3) Cumin 1 teaspoon 4) Mustard 1 teaspoon 5) Asafoetida 1/4 teaspoon 6) Onion, ginger, garlic, green chilly. Paste

  1. Curd - 1/2 cup
  2. Water - 1 glass
  3. Garam masala 1/2 teaspoon
  4. Coriander leaves - chopped
    Method :-
    Wash the arbi

    Because it has soil, it grows inside the ground, after that put it in the cooker, add water and take 3 whistles

    So that it becomes soft, then take it out and remove its peel

    And cut it

Now put oil in a pan, add mustard seeds, cumin seeds, asafoetida and heat it, add onion, ginger, garlic, green chilli paste and fry it

Then add all the spices (red chilli powder, salt, garam masala, coriander powder, turmeric) and add some water and fry well. Then add 1 cup curd to the spices and cook.

Until the oil separates

Till then add 1 cup hot water to the gravy and let it boil, then add chopped arbi to it

Mix it and let it cook for 5 minutes

Now turn off the gas and add coriander leaves

Eat and feed it with roti or paratha

अरबी की सब्ज़ी यह उतर भारत में बहुत पसंद की जाती है इसे Toro root भी कहते हैं यह फाइबर की मात्रा से भरपूर होती है जो ब्लड प्रेशर को कंट्रोल करती है इससे पाचन शक्ति भी मज़बूत रहती है यह एक तरह की जड़ होती है जिसे सब्ज़ी की तरह इस्तेमाल किया जाता है शायद इसे कम लोगो ने ही खाया होगा लेकिन यह बहुत ही स्वादिष्ट लगती है
सामग्री :-
१) २५० ग्राम- अरबी ( तारो)
२) ऑयल १ टेबल स्पून
३) जीरा १ चम्मच
४) राई १ चम्मच
५) हींग १/४ चम्मच
६) ओनियन , अदरक, लहसुन, ग्रीन चिली। पेस्ट
७) दही- १/२ कप
८) पानी- १ ग्लास
९) गरम मसाला १/२ चम्मच
१०) धनिया पत्ता - चॉप्ड
मेथड :-
अरबी को धो

लेंगे क्योंकि इसमें मिट्टी होती है यह जमीन के अंदर उगती है इसके बाद इसे कुकर में डालकर पानी डालके ३ सीटी ले लेंगे

ताकि यह सॉफ्ट हो जाए फिर इसे निकाल कर इसके छिलके निकाल देंगे

और इसे कट कर लेंगे

अब पेन में ऑयल डालकर इसमें राई, जीरा, हींग डालकर गर्म करके इसमें ( ओनियन, अदरक, लहसुन, ग्रीन चिली) का पेस्ट डालकर भुने

फिर इसमें सारे मसाले ( लाल मिर्च पाउडर, नमक, गरम मसाला, धनिया पाउडर, हल्दी) डालकर थोड़ा सा पानी डालकर अच्छे से भूनेगे फिर मसाले में १ कप दही डालकर पकाएँगे

जब तक ऑयल नहीं छूट जाता है

तब तक फिर ग्रेवी में १ कप गरम पानी डालकर उबलने देंगे फिर इसमें कटी हुई अरबी डालकर

मिक्स कर लेंगे और ५ मिनिट तक पकने देंगे

अब गैस बन्द करके धनिया पत्ती डाल देंगे
इसे रोटी या पराठे के साथ खाए और खिलाए
