Dal-Baati

Dal-Baati is liked in Rajasthan as much as it is liked in the country and the world. The history of Dal-Baati is connected to Rajasthan. Baati was not born in any royal kitchen but in the battlefield. Once the soldiers made balls of flour and buried them in the soil in the hot sun and then when they returned, they saw that the balls of flour had cooked well. Since then, it became a convenient food for Rajput soldiers to eat during war. They used to cook by burying them in sand and then eat it by adding ghee.

Later, Baati was transformed into a royal food and Daal and Churma were also included with Baati.

With Baati:-

Ingredients:-

  1. Wheat flour- 3 cups

  2. Gram flour- 2 tsp

  3. Celery- 1/2 tsp

  4. Salt- 1 tsp

  5. Baking powder- 1/2 tsp

  6. Turmeric - 1/2 tsp

  7. Ghee - 1 table spoon

  8. Water - as required for kneading

  9. Ghee - for applying Baatipe

Method: -

Firstly, take flour in a big vessel

Add all the ingredients (gram flour,

Salt, turmeric, carom seeds, baking powder

Ghee

Add it and mix it well. Then add lukewarm water little by little as per the need and prepare a hard dough by kneading it.

Cover it and keep it aside for 30 minutes
After 30 minutes, break the dough into balls

Shape it into a ball and make it round by pressing it with your palm

And make a plus shape on it with a knife

Now put the Baati in the preheated oven or in the Baati mold and

Cover it

Flip it in between on low flame

When the Baati becomes light brown from all sides, it is cooked. Now break the Baati a little and apply ghee properly.

Baati is ready

Dal :-

Ingredients :-

  1. Urad dal - 1/2 cup

  2. Moong dal - 1/4 cup

  3. Chana dal - 1/4 cup

  4. Green chilli, garlic, ginger, onion paste

  5. Tomato - 1 finely chopped

  6. Red chilli powder - 3 tsp

  7. Coriander powder - 2 tsp

  8. Turmeric powder - 1/2 tsp

  9. Salt - 1 tsp

  10. Garam masala - 1 tsp

  11. Coriander leaves - finely chopped Chopped

  12. Oil- 1 table spoon

  13. Asafoetida- 1/4 tsp
    Method :-
    Mix all the dals

    Soak in water for 1 hour

    Then wash the soaked dals with clean water and add 2 cups of water and put it in the cooker to cook. After 2 whistles turn off the gas
    Now put oil in the pan and add mustard seeds, cumin seeds and asafoetida and let it crackle

    Then add (green chilli, ginger, garlic and onion paste) and fry

    Now add finely chopped tomatoes and all the dry spices (red chilli powder, coriander powder, turmeric, salt) and mix well and cook

    Until oil comes on top of the spices

    Now add boiled lentils

    Mix it, add water as required and let it boil

Now add garam masala and coriander leaves and turn off the gas

Dal is ready

Eat Baati dipped in ghee and hot dal with onion

And feed him
