Tindori (Kundru) Sabzi
This is a type of green vegetable which is rich in fiber and also contains Vitamin A and Vitamin C.
Ingredients:-
- Tindori - 500 grams
- Green chilli, garlic paste
- Onion - 2 cut lengthwise
- Tomato - 2 cut lengthwise
- Red chilli powder - 2 teaspoons
- Coriander powder - 2 teaspoons
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Asafoetida - 1/4 teaspoon
- Oil - for frying and tempering
- Coriander leaves - cut
- Garam masala - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard - 1/2 teaspoon
Method:-
Wash the tindori and dry it till the water evaporates. Then remove the stalk from both the sides and cut it into 2-4 pieces lengthwise.
Put oil in the pan and deep fry these pieces.
And take them out.
Now again add 2 spoons of oil in another pan and add mustard seeds, cumin seeds and asafoetida and let them crackle
Then add green chilli, ginger, garlic paste and fry it
Then add onion,
Tomatoes
And add all the spices (red chilli powder, salt, coriander powder and turmeric) and mix well and let the spices cook well
Now mix the already fried tindori with this masala and cook it well
You will see that all the masalas have come on the tindori piece and its color has also changed
So the vegetable is ready, now add garam masala and coriander leaves to it, mix and serve.
Eat and feed it with chapati, paratha and rice.
