'Falafel' is one of the most common dish in Arab countries made out of Chickpeas. Too good to eat, but in the form of sandwich, especially a veggie sandwich. It is fried, then crushed and kept inside the kuboos (a flat bread in Arabic) along with a slice of salted cucumber, salted carrot, salted beetroot, steamed brinjal, french fries, hot sauce, ketchup and finally some salad dressings with sandwich sauce as per individual requirement. This one sandwich is a heavy dinner per person.
This was years ago while working in one of the Arab country. Most of the weekend myself and my family used to visit an Arab Cafe just for this mouth-watering recipe.
Back in my country, I just make the Falafel, as an evening snack with tea. I learnt it from one of my Arabic colleague. But then I made a slight variation, I add a little spice and shallots which they do not. But trust me they taste too good for an evening snack. I do this very rarely and each time its on the table memories flashback and the plate is emptied in no time.
Fine, let me come to the recipe:
INGREDIENTS:
- Chick peas - 1/4 kg
(soaked in water for nearly 6 hours) - Shallots - around 15 in numbers
- Green Chillies - 2 spicy (optional)
- Coriander (whole) - 20 grams
(should be crushed) - Coriander (leafs) - 50 gms.
(chopped slicely) - Salt - as per your requirement.
So these are the requirements for a hot snack called 'Falafel'
Method of preparation
Firstly, grind the chick peas, shallots, green chillies and half of the chopped coriander leaf to a paste ( a little coarsely). You can add water little by little, the consistency should be hard and not watery.
Remove from the mixer jar, and add the remaining chopped Coriander leaf and crushed whole coriander. Finally add some salt.
You can use your clean hands to mix it well and can make round or oval balls or flattened balls as per your desire.
In the meantime you can heat the oil in a medium flame, just to consume time. Once the mixture is ready you can deep fry in a low flame.
Note: Too much heat will burn the outer part, leaving the inner part uncooked.

- Just turn once or twice. Here you can have it hot.
Cooking Time : 4 to 5 minutes
Servings : Based on size minimum 18 to 20 piece.
