From milk to cream, cream to butter, finally butter to ghee. - try it from your comfort zone

Greetings dear Hiveans ! Hope all are keeping themselves busy with the weekend.

In most food communities, we get to know the preparation of different foods from different parts of the world. So with a slight change, I need to let you know the preparation of one item, which is commonly found in many kitchen, And it is ghee, which is otherwise called as clarified butter.

Home made ghee

There are three process to get the final result of clarified butter. So let me guide you in step-by-step process.

Firstly, preparation of milk cream / malai
Secondly preparation of butter from milk cream.
Thirdly and finally, preparation of ghee from butter.

The best part of this is àlmost all these things are made with just one ingredient and ie., milk.

STEP BY STEP PREPARATION

STEP - 1

Preparation of milk cream

Ingredients required:.

  • Milk - 1 litre

Take one thick bottomed vessel and pour the milk. Bring the milk to boil in high/medium flame and reduce the flame, once boiled. Now let the flame be at its minimum for 3 to 4 minutes. Afterwhich, you can switch off the flame. After an hour or two, you can see a creamy layer forming on top of the milk. This layer can be removed and stored in a container, when thickened.

To it add little curd eg. If you have four tablespoons of this thick layer, add just half a tablespoon of curd. Keep it over night and the very next day store it in a container and keep it in the refrigerator. Continue this process, and every next day pour this in the container. When the container is full (500 gm. approximate), you can go for the next process.

NOTE : If the cream is taken daily, in 20 days time the container is full. And you can go for the next process.

STEP - 2

*Preparation of Butter from Milk Cresm

The milk cream collected in a container during a month's time

Pouring cold water gradually to get the thick form of butter fast.

Finally, the butter is retained in a container

Ingredient required :

  • Milk Cream - taken from 1 litre milk and refrigerated
  • Cold water - one bottle (1/2 litre approx.)

Take your mixer grinder and to it add the milk cream and add the ice cold water gradually. Now run the mixer for sone time. Each time you run the mixer you should add cold water. Only then, you can see the butter getting separated and forming on top, while the butter milk is at the bottom. Continue this process, unless you get the butter in hard form.

Now, remove the butter from the butter milk and place it in a container.

An important note :
The best time for taking butter is early in the morning. This is an old generation say, you get more amount of butter in the early hours of morning.

STEP - 3

Preparation of ghee from butter

Keep stirring in between so that it does not stick to the vessel.

*The final result *

Shifted to an air tight container

Ingredients required:

  • Butter - the one taken from milk cream

Take à thick bottomed vessel / skillet and add the butter to it.In the beginning, you can see the froth. Keep stirring in between so that, it don't stick to rhe vessel. Finally, you can see some residues left beneath and the colour of butter turns to dark brown from white.The froth is completely disappeared, which means it's the right time to switch off the stove. And finally, home made ghee is ready .

Do note:
Its quite a long process and time consuming. So better to do this when you are totally free
