The first thing I'm going to do is chop the onion, garlic, chili, and sausages. I'll cut the onion into small pieces, as I don't like the consistency to be felt when eating. I'll also chop the garlic very finely so that it blends perfectly into the dish. As for the sausages, I'm going to cut them in half and then chop them into smaller pieces. For the chili, I chopped it into tiny pieces.

Now I'm going to dice the chicken breast and season it with chicken broth cubes, salt, and annatto. The latter will give the rice a beautiful color. Originally, I would have preferred to add carrots, but I didn't have any at home, so I'll opt for annatto to give it that special touch. Once the chicken is well seasoned, I'll sauté it briefly in a cauldron or pan with a little oil. I'll let it fry for a moment to seal it and keep it juicy.

Once the chicken is seared, I'll add the onion and garlic to sauté together with the chicken. I'll let them cook for a while until the onion becomes slightly translucent. Then, I'll add the chili and sausages. After adding them, I'll let everything sauté for a while so the flavors blend well.

Now it's time to add the rice. I've already washed it beforehand, so when I put it in the pan, I'll stir it a bit so it blends well with the other ingredients. Then, I'll add two cups of water for every cup of rice. After that, I'll cover the pan so the rice cooks evenly and absorbs all the flavors.This lunch is for three or four people, depending on how much each person eats. Once I saw that the rice was completely dry, I removed it from the heat and let it rest, covered, for a moment before serving.

And so this delicious lunch was ready. Honestly, I'm not a big fan of rice, but this time I decided to enjoy it, and it turned out really delicious! I think there's something special about cooking with passion and dedication; perhaps that was what made the difference. Maybe the good weather that day also helped everything turn out so well. The important thing is that, in the end, the effort was worth it, and everyone was satisfied.
