Happy start to the new week foodie friends and those who love ❤️ everything with carrot 🥕. And who does not like carrot with its versatility? A vegetable we can crave for from time to time and in different ways.
The problem I have is that I never passes a carrot at the grocery store or a carrot 🥕 vendor without buying it especially during the season that you can be attracted to those colors that keeps beckoning on you.
Today I made a carrot mini pan cake for my daughter who came in for the weekend from school. She said she has really missed my baking especially the mini cake treats we usually have during the weekends. And since she will be living at noon, I decided to wake up early this morning to make this cake for her to take away and also share the recipe with you foodie friends.
Its a simple recipe with few ingredients from the pantry but one that turned out delicious. These are the kinds of cakes children 👧 will like because it’s mine and taste so good. One you will not want to share with anyone when mummy gives one to you. Haha 😆.
Join me for the step by step as I prepare this delicious carrot 🥕 mini pan cakes 🥮
INGREDIENTS:
300 g of all purpose flour
2 large eggs
1/2 cup of premium sugar
2 tablespoons of margarine
1/2 glass of liquid milk
1 large carrot
1/2 teaspoon of baking powder
1/4 teaspoon of salt
STEPS FOR PREPARATION:
Step 1.
First thing is to clean, wash and grate the carrot 🥕 . Readily
Step 2.
We take the required quantity of margarine into a bowl.
Added Sugar and mix the two properly to become light and fluffy .
Step 3.
Here we add the egg one by one and beat it into the margarine mix.
Then pour some liquid milk and properly incorporate all together
Step 4.
We pour the flour into a sieve, adding the baking powder and salt here above.
Step 5.
Stir the baking powder and salt into the flour and sieve them into the mixture.
And gradually stir to incorporate them together to form a batter adding remaining milk.
We have our batter readily here.
Step 6.
Once the batter is ready, we add the grated carrot here and incorporate.
And we glaze the mini pans with some margarine.
Step 7.
Finally we pour the batter into the pans readily for baking.
And bake for 35 minutes at 200 Celsius
Delicious and yummy 🤤. Am so thrilled to have prepared this carrot cake 🥮 for my daughter. And she was so happy knowing how delightful it taste.
