How are you all doing this Sunday friends who love foods. It has been a while but today guys I decided to pass by to bring you some healthy breakfast that can be prepared quickly from my kitchen.
I know many of us love ❤️ scramble eggs which we can prepare in different ways 🍳 but in my today’s recipe I have prepared a vegetable scramble egg adding little spice to make the veggies warm for a good meal 🥘 with some boiled plantains.
This is the kind of breakfast you will want to make when not in the mood for coffee ☕️ or tea 🍵 in the mornings because you needed something with spice just like I did this morning. Its very quick and enjoyable.
Here I take you through the steps for this recipe.
INGREDIENTS:
Some vegetables of pumpkin leaves 🍃
2 ripe plantains
2 large cherry tomatoes 🍅
2 hot red chili 🌶
Salt to taste
Vegetable oil
1 large egg
1/2 teaspoon of curry
STEPS FOR PREPARATION:
Step 1:
I will start this recipe by first washing and slice cutting the vegetables.
Step 2.
And here have the vegetables readily .
Step 3.
Will wash and peel the plantains, cutting into round shapes.

Step 4.
Took the plantains into a pan for boiling adding water and sprinkle salt.
Step 5.
I will cover to cook for at least 10 minutes to tender well.

Step 6.
Will drain off the water, take it into a plat to start cooling down.
Step 7.
Next is to fry the cherry tomatoes 🍅 and chili 🌶 once the oil heats up, adding the salt and curry.

Once the sauce tenders , I will add the vegetable and fry under low heat, adding the egg for that veggies egg scramble.

Step 9.
And will serve the breakfast here. A quick and simple one.
We all love coffee ☕️, tea 🍵 for a quick morning breakfast but sometimes we crave something different like some light spicy breakfast which is what I got here for you all. Hope you enjoyed it .
