Easy Chili Oil Noodles - TacoCat (kinda) Cooks! #65

Hey Hive!

We're back with more of our home cooking! If you're unfamiliar with this series, it's where I showcase some new recipes I've been trying at home since I've been cooking a lot nowadays! Both because it's cheaper and also healthier to cook for yourself compared to eating out. While I have some regular recipes I do like to try new things and figured I'd share the new ones I've tried.

We bought these noodles back from our trip to China and it looked just like the type of noodles that I like to eat, so I was curious how it would taste.

The directions seemed simple enough, and since it's a dry noodle you really only have to blanche the noodles for a bit and add the seasoning packet after. I think you could even make this with a kettle of boiling water, no stove required!

But as always I like to add some vegetables to my dishes so it's a little healthier. Here's the ingredients:

  • 2 packs of Chinese chili oil hot and sour noodles
  • 200g spinach
  • 2 carrots

Here's what one packet of the Chinese noodles looks like. The words translate to red oil flat noodles.

One packet's portion looked quite small though, it looked more like a snack than a meal, but I was hoping it would look more filling after I boiled it.

Step 1: Prepare the veggies by washing and slicing the carrots julienne, and chopping the spinach into smaller portions.

Step 2: Add the veggies to a pot of boiling water and let it boil until the veggies get soft.

Step 3: Add the noodles into the pot and boil for another 5-6 minutes.

Step 4: Once the noodles have been boiled enough, drain the pot and scoop the noodles into a bowl.

The noodles are packaged with a small pack of chili oil and soy sauce and I like to pour the sauce into the bowl first before ladling the noodles on top for easy mixing.

Once you've mixed the noodles and coated them in the sauce, it's ready to be served!

The noodles were actually really nice and had a soft and silky texture. The sauce was indeed spicy and a little sour, but not too much which was good. Unfortunately the noodles were not as sufficient as I had hoped. I definitely felt like for the amount of sauce was fit for 2 portions of noodles. We didn't have any meat with the noodles but we might've air fried some chicken nuggets to go along with it.

Overall though, it was still pretty tasty but I will definitely need an extra packet of noodles next time I cook this again.
