So dear friends.With my busy schedule lately, I haven't had time to cook any vegetables. I got some capsicums that I couldn't cook. They were a little less fresh. But I didn't want to throw them away. Because I actually brought these in very fresh form. So I made a delicious curry with these capsicums. Let's see how to make it.
Ingredients;
- About four capsicum pods
- Half cup of thick coconut milk
- Two eggs
- Two tablespoons of oil
- A chopped large onion
- A few cinnamon sticks
- A few curry leaves
- Half chopped ripe tomato
- Two chopped cloves of garlic
- Half teaspoon of chilli pieces
- Three chopped green chillies
- A teaspoon of salt powder
- 1/4 teaspoon of turmeric powder
- Half teaspoon cumin powder
- Half teaspoon of mustard powder
- 1/4 teaspoon of fenugreek seeds
The method of making;
Add oil to the pan and when the oil is hot, add the finely chopped garlic. Then add the finely chopped b onion and sauté over medium heat for about a minute.
Then add chopped tomatoes with green chillies to it.
Cook a minute.
After that add half teaspoon of salt powder, 1/4 teaspoon of cumin powder with A portion of turmeric powder.
Add the chili pieces and stir until everything is well mixed.
Now add 2 eggs.
Stir fry with low flame.
Once the moisture content of the mixture has reduced, remove it from the heat and transfer it to another bowl.
Wash and clean the capsicum thoroughly, take them one by one, cut the middle so that they do not separate, and remove the seeds inside.
Take one tablespoon of the prepared egg mixture and stuff it inside the capsicums.
Take another pan, add coconut milk to it, and add all the curry mixture.
Add cinnamon sticks with curry leaves.
Mix well.
Add the stuffed capsicums cook on medium heat for about ten minutes. Since the coconut milk may run out very quickly when cooking on medium heat, cook on low heat for about five minutes and cook the remaining five minutes on medium heat.
It looks beautiful. It tastes good. In fact, this capsicums curry is actually more delicious when served cold than when served hot. The capsicums with this egg filling is very tasty. You can eat rice with this too. No other dishes are needed. So I believe my friends will also try this delicious dish.
