I think I tried raw shrimp in a sushi recipe a long time ago, and if my memory serves me correctly, the flavor is very mild. I definitely prefer the cooked option because the risk isn't worth it. Besides, you're absolutely right, perhaps because of our Latin palate, that the flavor of shrimp is more enjoyable when cooked because it's more intense!

I loved this recipe, and the photos are fabulous. It looks super delicious, especially the broth with the shrimp shells 🍤 🧡 🦐
