
I’ve been making buffalo wings for quite some time now, and over the years, I’ve picked out the best bits from many different recipes. After plenty of trial and tweaking, I’ve finally settled on my own version. This is easy, simple, delicious, and not much fuss. It’s the kind of recipe you can whip up in about an hour.
Buffalo wings are an American classic, born in Buffalo, New York, and they’ve since become a global favourite. Crispy on the outside and coated in a buttery hot sauce with just the right amount of heat, they’re normally paired with blue cheese dip and crisp celery. The flavours come together beautifully!

🔥 Homemade Garlicky Buffalo Wings with Blue Cheese Dip
Ingredients:
Wings:

4 lb (2 kg) chicken wings (drumettes + wingettes)
5 tsp baking powder (NOT baking soda) - this makes the skin crispy.
¾ tsp kosher salt
3 cloves garlic, minced
Buffalo Sauce:

4 tbsp butter, melted
½ cup hot sauce (like Frank’s)
1 tbsp brown sugar
¼ tsp salt
Blue Cheese Dip (I usually double this as it is delicious):

½ cup blue cheese, crumbled
½ cup double cream
¼ cup mayonnaise
1 clove garlic, minced
2 tbsp lemon juice
Salt & pepper to taste
To Serve:

Celery sticks
🔥 Instructions
🍗 Prep the Wings:
Pat wings dry with paper towels.

In a large bowl, toss wings with baking powder, salt, and minced garlic until evenly coated.
🔥 Bake for Crispiness:
Preheat oven to 425°F (220°C).

Arrange wings skin-side up.

Bake for about 45 minutes, or until golden brown, crispy, and sizzling, no need to flip!
🌶️ Make the Buffalo Sauce:

Mix melted butter, hot sauce, brown sugar, and salt in a small bowl.

Gently heat up to meld the flavours.

Toss the crispy wings in the sauce, or serve the sauce on the side for dipping.
🧀 Blue Cheese Dip:

Mix the mashed blue cheese, double cream, mayo, garlic, lemon juice, salt, and pepper.

Mix well and adjust to taste.
🍽️ Serve:

Hot wings with blue cheese dip and crisp celery sticks.

Buttery hot sauce, the wings are juicy on the inside and crispy on the outside.

The spiciness was balanced well by the crisp celery, and the cheesy flavour paired beautifully.
