
The nicest pork dish I cook, and one that everyone loves, is this simple one I learnt from my grandfather, Lolo Quising. He actually left us a few really nice recipes, and I’ve kept hold of them, including some tips and little touches that make the dish extra special. I was very fond of him, he was a funny grandad and a natural chef!
Anyway, this dish is the easiest and simplest, yet it’s also the nicest.

Even with only a few ingredients, it outshines any other pork dish I make, and it’s requested at least once or twice a week.

One thing I changed in the recipe is adding lots of whole garlic, there’s no need to chop them, as they just melt.
So here it is:
Grandad's Delicious Pork Dish
Ingredients:

1 kg pork belly or shoulder (sliced into medium-large chunks)
Garlic (I add as much as I like)
2 teaspoons salt (adjust to taste)
Black pepper
½ cup vinegar (I use my homemade apple vinegar)
Water
Easy Procedure:

Put the pork in a deep pan. Add the salt, black pepper, and garlic.

Add the vinegar.

Pour in enough water to cover the pork.

Put the lid on.

Simmer until the pork is tender.

Remove the lid and let the remaining water evaporate.

If the bottom caramelises or catches, add a little water to loosen it, this adds more depth of flavour and colour. Some of the fat will render into oil, and the pork will begin to fry in it.

Once it has browned slightly, it is done.


You can garnish with spring onions, onions, chillies, or pepper.

Serve with piping hot rice, delicious with side pickles, salad, chilli oil, or whatever you prefer. Yum!

The result is very tender meat that almost melts in your mouth.

It's so simple and really flavourful.
