If I was worried about gluten or flour I'd take a look at the ingredients of the sausage though. Maybe they are better in Canada - here sausages can contain quite a lot of starch, often bread crumbs. Makes them cheaper I suppose.

Yes, almost everything contains flour, even soy sauce! That’s why I can’t (or don’t want to) be too strict about my food restrictions. As you said, Canadian sausages are pretty healthy, but we still have to be careful and check the ingredients. Just eating or even thinking about food already makes us feel happier, right!?
