Do you know Fritto Misto?

Fritto Misto is a special and famous italian seafood dish very easy to prepare!
In Italy we use to go to the fish shop in order to buy:
• 300 g (10 oz) baby squid, cleaned and left whole or cut into rings
• 300 g (10 oz) prawns or shrimp, unpeeled (shell and head on, just remove the vein)
• 300 g (10 oz) small fish such as anchovies, sardines, or mullet — gutted but kept whole
serves 4

A. Rinse and dry the seafood (leave prawns and small fish mostly whole for rustic flavor).
B. Heat plenty of oil to 170–180°C (340–355°F).
C. Dredge seafood lightly in flour, shaking off excess.
D. Fry in small batches for 2–3 minutes until golden and crisp.
Serve hot with sea salt and lemon wedges.
