The Fried rice, chicken and salad delicacy is an over-hyped dish here in Nigeria 🇳🇬😋. And i can't blame them, as it lives up to the name.
Today, I’m going to be sharing my basic vegetable fried rice recipe at the bottom of this post, but don’t feel like you have to follow it to the letter. One of my favorite things about fried rice is that it’s customizable. Feel free to add whatever veggies you like, or toss in a protein to make it more filling.
Fried Rice Ingredients;
Here’s what you’ll need to make this fried rice recipe:
- Rice: of course! Leftover white rice is best here because it’s drier than freshly cooked rice. If you don’t have leftover rice on hand, you can still make do with your freshly cooked rice 🍚, put it in a sieve and let it drain. It should be the first thing you've cooked so it can dry on time ⏲️as you're getting the rest of the ingredients ready.
White onion, purple onions, and garlic – For savory, oniony flavor.
Carrots, bell pepper, green peas – They give this fried rice a veggie punch. Be sure to finely dice the carrot so that it softens at the same rate as the onion.
Fresh ginger – I love the refreshing kick it adds to this recipe.
Turmeric, and spice:
For the lovely color 😍and taste it gives.Sweet corn and baked beans- (optional) for protein fillings
Chicken,or Beef, or fish or Meat- Depends on your choice of protein
Irish potato, cabbage- for salad
Olive or Groundnut oil– For cooking the rice, chicken, and veggies!
How to Make Fried Rice
This fried rice recipe is easy to make! Here’s how it goes:
- Steam your choice of protein (I used chicken)🍖 with garlic, seasoning cubes, ginger, onion, and salt to produce your meat stock. Make sure the meat is properly cooked.
Par-boil your rice 🍚 and sieve
Cut your veggies into a medium-sized shape. This depends on your choice though.
In a pot, add your ground nut oil, fry your meat (optional), using the same oil, add your pounded turmeric, onion, bell pepper, green peas, sweet corn, and the rest of the veggies in no specific order.
Add the meat stock and do not let the veggies overcook, for better taste.
Stir and check for salt
Add your rice 🍚
When the water is dry, you turn it off
Voila 💕, your delicious fried rice is ready
