I once came into a whole pile of organic zucchini; I took it (along with some other organic fruit/veg) as payment for some IT work I did for a friend who was an organic farmer/food distributor. 😄 So I had to figure out what the heck to do with all of it before it went bad.

Interestingly, I didn't have any lemons on hand for the first batch, so instead I zested some grapefruit and threw that in. It was just as good, if not better!
