These local vegetable soup is not just nutritious but very tasty and nice.
A taste will definitely convince you, I implore everyone not just to comment but also to try it out.
These vegetable soup has been my favorite since childhood and today am going to show everyone my mom's special recipe for it.

🌻1/2 paint of ukazi leave (Gnetum Africanum)
🌻3 big bunch of waterleaf plant(talinum triangulare)
🌻2kilo of protein (chicken and red meat)
🌻half bottle of red oil (it consumes oil)
🌻1cup of crayfish
🌻Red pepper (according to your taste bud)
🌻2piece of maggi cubes
🌻Salt to taste
🌻 Water (as desired)
You can add as many protein as you desire , you can add periwinkle, snail, fish etc.
The time consumed while preparing these local dish varies and it's mostly depends on the type of ingredients you planned to use,
For instance, the waterleaf was washed and cut by me which took time but some people prefer using already cut waterleaf direct from the market and it reduces time .
The maximum duration for preparing these dish is 1hour plus 20 minutes.

Wash your proteins and transfer to a clean pot, add the red pepper, salt and Maggie cube, set on a burning stove and allow to boil. (Note: do not add water because the protein is meant to produce it's own water first before adding extra water)
once the protein starts producing it's own water, add a little quantity of water and allow the protein to boil till tender.

While the protein is boiling, wash and cut the vegetables (the ukazi and the waterleaf) and set aside.
Blend or pound the crayfish and also set aside.

In another clean pot, add your red oil ,add the water leaf and allow to boil for some minutes.
You will notice the big amount of water coming out from the waterleaf , don't panic just allow it to boil for some time and by doing so, the water will also reduce.

Add your crayfish, salt and the remaining cubes allow to boil.
After some time , transfer your proteins to the pot of waterleaf and stir

blend or pound your ukazi leave and add .
Wait for 5minute then bring down.
Your delicious local Vegetable soup is ready

This soup is best served with garri or fufu (cassava products prepared with hot water)
