This would be totally something for you then, as without noticing there is a lot of scraps to stock actually. Just cutting it off and keeping them into a freezer bag and using them all at the same time. What I have learned is that the colour of the stock becomes like this because of the onion peel that you toss in there as well. Not from the onion itself but from the peel. Funny right!

The other thing I've seen people do is to boil the scraps, purée, then freeze into cubes and wrap in foil to make veggie stock cubes, 100% 0 waste and easier to keep

Ive seen that as well inderdaad. Well I like the moist version in general. Also thought with the liquid form the freeze them in cubes, but I know how my walk to the freezer goes while making ice cubes hahaha.

So.....you are gonna try this one and let me know how it worked out? :D
