✦ "What type of food do you prefer? Are you on the 'healthy team' or do you prefer junk food? Or do you simply maintain a good balance between the two?" ✦

El tipo de comida que prefiero actualmente es la comida fácil de comer de alto valor calórico-nutricional y con la menor cantidad de aditamentos (químicos) procesados posible (hoy empezamos escribiendo sin rodeos 😂 porque no hay otra manera de decirlo): Con el tiempo por las buenas o por las malas, la comida chatarra aunque deliciosa te hace daño y las visitas al doctor no valen "ese gusto culposo".

The type of food I currently prefer is easy to eat food with a high caloric-nutritional value and as few processed (chemical) attachments as possible (today we start writing bluntly 😂 because there is no other way to say it): In time, by hook or by crook, junk food, although delicious, will hurt you and visits to the doctor are not worth "that guilty taste".

Claro, es inevitable tocar la tecla (dolorosa y real) de que vivimos en un mundo y en un periodo de la historia donde escoger qué puedes comer es un lujo. ¿Quién puede escoger qué comer y qué estilo de vida tener con la crisis social y económica generalizada en el planeta?. La comida es mas costosa que nunca y ver y conocer muchas circunstancias de vida diferentes me ha hecho reconsiderar y valorar todo lo que tiene que ver con el tema de la alimentación... pero no fue un proceso de la noche a la mañana.

Of course, it is inevitable to touch the (painful and real) key that we live in a world and in a period of history where the choice of what to eat is a luxury. Who can choose what to eat and what lifestyle to have with the generalized social and economic crisis on the planet? Food is more expensive than ever and seeing and knowing many different living conditions has made me rethink and value everything that has to do with food... but it was not an overnight process.

✦ Sometimes I miss junk food and I do eat the occasional cookie or cake, but not too often ✦

"¿De dónde viene lo que consumo?, ¿cómo fué procesado?, ¿por qué tiene ese precio?, ¿qué le aporta a mi organismo?, ¿cuál es mi relación con la comida?, ¿consumo por consumir?, ¿como esto porque sabe bien, porque no quiero cocinar, porque es barato?..." me he planteado estas y más preguntas muchas veces hasta que me di cuenta que la idea de consumir alimentos no escapa del "propósito", es decir que comer como aspecto de la vida debería ser un acto hecho con propósito: De responsabilidad, amor propio, y hasta consideración con nuestro entorno y otras formas de vida.

"Where does what I consume come from?, how was it processed?, why does it have that price?, what does it contribute to my body?, what is my relationship with food?, do I consume for the sake of consuming?, do I eat this because it tastes good?, because I don't want to cook?, because it's cheap...? I have asked myself these and more questions many times until I realized that the idea of consuming food does not escape from "purpose", that is to say that eating as an aspect of life should be an act done with purpose: Of responsibility, self-love, and even consideration for our environment and other forms of life.

Salvando las obviedades, comer saludable propiamente dicho no es un tema difícil cuando lo piensas bien, aunque solo puedo hablar por mi porque todo es circunstancial.

Saving the obvious, healthy eating itself is not a difficult subject when you think about it, although I can only speak for myself because everything is circumstantial.

Por ejemplo la comida saludable a algunos les puede parecer sin sabor y comer sin apetito o re-educar el paladar para superar las adicciones de los sabores artificiales (potenciadores del sabor) esta complicado después de una vida disfrutando de, por ejemplo, dulces y maravillosas frituras.

For example, healthy food may seem tasteless to some and eating without appetite or re-educating the palate to overcome addictions to artificial flavors (flavor enhancers) is complicated after a lifetime of enjoying, for example, sweet and "wonderful" fried foods.

✦ I learned to appreciate the taste of each natural ingredient as it is ✦

Y aqui hay un punto y aparte cuando te das cuenta de lo valioso que es saber cocinar, ¡me encanta cocinar!, no solo por mi sino por el bienestar y la capacidad de solución con la que puedo ayudar a mi entorno a alimentarse con recetas más saludables (no sé en tu país pero en mi ciudad los servicios de comida "saludable" son costosos).

And here is a point and apart if you realize how valuable it is to know how to cook, I love to cook, not only for myself but for the wellness and the capacity of solution with which I can help my environment to feed itself with healthier recipes (I don't know in your country but in my city the "healthy" food services are expensive).

Pero cocinar requiere tiempo, la cocina fácilmente puede tomar de 2 a 4 (o más) horas de tu día, hay que saber organizar los tiempos y allí es cuando comer saludable entiendo que es una meta que logras construyendo poco a poco (o que si tienes muchas responsabilidades de vida, quiza nunca alcances y solo sea un habito intermitente cuando las circunstancias te lo permitan):

But cooking takes time, cooking can easily take 2 to 4 (or more) hours out of your day, you have to know how to organize your time, and that is when healthy eating is a goal to be achieved little by little (or if you have many life responsibilities, you may never achieve it and it will only be an intermittent habit when circumstances allow):

Aprendes primero para qué sirve cada ingrediente, qué combinaciones funcionan, qué recetas te gustan y son viables, tambien aprendes los tiempos de cocción y cómo los sabores cambian dependiendo el tratamiento que le des a tus ingredientes (te asombras de qué tan diferente sabe lo hervido, lo guisado, y lo horneado así utilices los mismos ingredientes en cada ocasión).You first learn what each ingredient is for, what combinations work, what recipes you like and are viable, you also learn cooking times and how flavors change depending on how you treat your ingredients (you are amazed at how different boiled, stewed, and baked tastes even if you use the same ingredients each time).

✦ I use this recipe very often because you need very few things in the kitchen and it is quick and delicious ✦

✦ I highly recommend this other recipe for dinner, although I don't cook the beets beforehand, I grate them raw and add them directly to the dough ✦

✦ And this is one of the recipes I use when I want something sweet, although I don't make the topping, I just like it in carrot cake ✦

Algo que me ha ayudado mucho y espero te ayude a ti tambien, es no quedarme solamente con la cocina que te enseñan tus mayores en casa, sino que mires cómo cocinan otras personas en sus paises e investigues el por qué cocinan como lo hacen. Recomiendo especialmente leer y ver canales de recetas de paises como China o México, de los que he aprendido a hacer platos geniales sin la necesidad que invertir una millonada en ingredientes específicos.

Something that has helped me a lot, and I hope it will help you too, is to not just stick to the cuisine that your elders teach you at home, but to look at how other people cook in their countries and investigate why they cook the way they do. I especially recommend reading and watching recipe channels from countries like China or Mexico, from which I have learned to make great dishes without having to invest a lot of money in specific ingredients.

✦ The great thing about cooking yourself and looking for healthy recipes is that you will always find many variations of each recipe, it is hard to get bored, and you will notice your body changing in a positive way ✦

Y si llegaste hasta aquí, imagino te estarás preguntando "¿y qué es lo que comes entonces ya que hablas tanto de comida saludable fácil, y esto y aquello?", bueno, me gusta cocinar en grandes cantidades para compartir y eso a veces condiciona un poco el menú que personalmente me gusta, pero para mí, me gusta cocinar platillos fáciles de comer pero que me den mucha energía y no fuercen mi organismo (todo bien cortado, bien cocinado y bien servido); muchísimas verduras, sopas, cremas y caldos limpios, carnes rojas y blancas en cantidades moderadas pero sin falta igual que las pastas y una que otra masa horneada.

And if you've gotten this far, you're probably wondering "so what do you eat, since you talk so much about simple, healthy food and this and that?". Well, I like to cook in large quantities to share and that sometimes determines a little the menu that I personally like, but for me I like to cook dishes that are easy to eat but that give me a lot of energy and do not strain my body (everything well cut, well cooked and well served); lots of vegetables, soups, creams and clean broths, red and white meats in moderate quantities but without fail, as well as pasta and the one or another baked dough.

✦ I still cannot drink coffee without sugar but I like bitter tea very much and I drink it many times a day ✦

Café claro que sí, pero sobre todo té verde, a todas horas y cada vez que paso por la cocina 🤌 🍵

Y para ayudarte si el tema de comer saludable te interesa, te comparto aquí varias de mis recetas favoritas o que más me gusta hacer durante la semana 🥰 seguro que la comida chatarra es sabrosa y económica pero le he perdido el gusto a medida que reconocí los sabores y el bienestar de la comida hecha con productos no (tan) procesados.
