You are what you eat. I don't think many people actually think deeply about this. We live in a world where convenience is so often chosen over healthy, when it comes to food. I get it, many of us live busy lives, we don't always have the time to cook things from scratch. But Eating healthy doesn't always have to be something super elaborate.

Quick and easy, can also be nutritious, once you know what to do. I stopped eating animals when I was a teenager, once I made the connection, between what I ate and the suffering that happened, in order to put it on my plate. It was an easy decision for me. It still is. So I had to become more inventive when it came to how I ate. In the beginning it was not easy, the 90's in Ireland, didn't have a lot of variety, when it came to the foods that were available. But over the years I educated myself, traveling definitely helped.

I love food and I mostly enjoy cooking, unless I'm tired or stressed. I'm very conscious about making nutrient rich food for my girls. I don't always get it right, sometimes after a very busy day, we have pizza, I usually buy the bases and we put on our own toppings. We eat a lot of legumes, beans, chickpeas are a stable. I also incorporate nuts and seeds a lot into our diet, along with lots of fruit and veg and mushrooms of course. We all love mushrooms. During the summer, we eat lots of salad, so lots of raw food, lots of greens, avocados, beetroot and seeds. I don't buy sugary things. Except for dark chocolate and if we fancy dessert we tend to make it ourselves or have berries and coconut cream or yoghurt.
I don't really have a sweet tooth, I prefer salty snacks, so ever once in a while we make popcorn or sometimes I do give in and buy some pretzels or potato chips. I like to stay away from processed foods as I want me and my girls to stay healthy. We only have the one body in this lifetime, so it's important that we look after it. That we fuel it with the right foods. What we eat, also has a huge impact on our emotions, on our ability to focus and to function at a high level. So eating real food is important.
Junk food, just leaves me feeling depleted, okay initially, some of the flavours might taste nice, but soon my body rejects it and I get cramps. So I don't enjoy it anymore. The more I look after myself, the more my body seeks out good food and it tastes so good to me. One of my favourite things to eat, is a green salad, with a tahini dressing, with avocados, red onion and some kimchi on the side. Yum. Simple and super nutritious, I feel my body rejoice when I eat it.
