At some point in life, people we think we know might shock and surprise us with the things they do, that we see. And it could seem like we never knew them.
It's like there's that side of people which time, available resources or particular situations tend to reveal. It leaves the question;
Do you think people change, or do they just reveal who they really are over time?
They just reveal their true self but in the other hand, people also influences people to change, if they see you as a good-hearted person, they try to use you without them knowing the seed they are planting.

I think people change over time because every new experience that they have in life will greatly affect their personality.
