It's not oil: they boil pork with herbs and soy sauce. They serve it with rice and give you fresh chili and garlic with it and pickles + boiled egg. One of my favorite dishes in Thailand, khao kha mu. In Northern India, they don't know how to cook meat of any sort, miss Thai food
