Trying to figure out what to cook for dinner.

May I introduce you to the ancient Minnesotan tradition of "hot dish," a.k.a. a casserole made hastily from browned ground beef/turkey or diced chicken, some form of condensed cream soup, and various vegetables?
That sounds like proper comfort food... simple, filling, and easy to put together.
I've done something similar, typically with cream of mushroom. Not a bad idea.
Cream of mushroom is the usual, although cream of chicken pairs well with chicken-based dishes, and cream of celery adds a nice touch sometimes.
Absolutely. The challenge for me is that I typically have to ride down to the grocery store to pick up what's missing. But the actual cooking is no problem.
That makes sense... sometimes getting the missing ingredients is the hardest part. 😅
