These are liquidity bots, meaning the developers of the game created them so that people can play matches if there aren't a lot of players logged in and actively gaming. They will be your opponent if there isn't another opponent to play.

But there's definitely a way you can tell if you are playing with a bot or human, right?

Yes, typically the bot will not belong to a guild and will mostly use cards from the pack set and not reward cards. These bots aren't labeled, but if you know what you're doing you'll be able to tell a bot from a human account.
