I'm sure I'm not the first to do it, but it was a first for me. I grilled a stalk of rhubarb today to see what it would taste like. Surprisingly, it wasn't stringy at all and was actually rather mushy. Clearly the heart breaks down the fingers. The taste was hard to describe, but a mix of smoky and tangy (which makes total sense).
