Early this morning, I woke up before dawn to head to my local fresh market. The neon lights illuminated the stalls, and the vendors were busily preparing their goods. I carefully selected the ingredients because I had an important mission today: preparing a special dish for a customer. I didn't spend much time at the market. Once I was finished, I immediately headed back to the restaurant. Upon arrival, I quickly prepared the ingredients for today's menu and prepared a dish for my husband and daughter to enjoy when they arrived. I chose the chicken curry stir-fry, a simple and quick dish that was incredibly flavorful.
The specialty of this chicken curry stir-fry lies in the curry paste. I got my secret recipe for the spicy stir-fry from a Muslim restaurant in the market. I can tell you it was incredibly fragrant and the flavor was incredibly rich. Once I had all the ingredients, I quickly started cooking for my family.

Ingredients and Ingredients

Making delicious stir-fried chicken with curry paste isn't difficult. All you need is these ingredients

  • 200 grams chicken breast
  • 1-2 tablespoons spicy stir-fried curry paste (adjust to taste)
  • Vegetable oil for stir-frying
  • 1/2 teaspoon sugar
  • 1/2 tablespoon fish sauce
  • A little water
  • Various vegetables
  • Chinese kale, cut into bite-sized pieces
  • Carrots, cut into small sticks
  • Onions, cut into small wedges
  • Green and red chili peppers, cut diagonally for garnish
  • Eggs for making fried eggs
  • Steamed rice, served with the stir-fried curry paste
  • Side dishes: Cucumber and fish sauce chili

Prepare Ingredients

Prepare the chicken. Wash the chicken breast thoroughly, then cut into bite-sized pieces or thinly sliced, depending on your preference. Set aside on a plate.

Method

  • Stir-fry the curry paste: Heat a pan over high heat and add a little oil. Add the curry paste and stir-fry until fragrant. The aroma of the curry paste will begin to waft throughout the kitchen.

While waiting, fry some eggs.🍳

  • When the curry paste is fragrant, add the prepared chicken and stir-fry until the chicken is cooked.

  • Season with fish sauce and sugar. Stir-fry until well combined. If it looks too dry, add a little water.

  • Add vegetables: Add kale, carrots, and onions and stir-fry until the vegetables begin to soften but remain crisp.

  • Scoop the stir-fried chicken curry onto a plate of prepared rice. Top with the fried egg that was prepared earlier. Sprinkle with the sliced chili peppers and garnish with cucumber.

  • Serve with chili fish sauce for a zesty flavor.
